Pujol: the oldest mole you will ever try and compare
· Polanco, Mexico City · By Christian Van Der Henst · 5/5
In Mexico, fine cuisine started with Olvera, at Pujol. You'll have elotitos, tacos, great mezcales and a beautiful venue in Polanco. But let's be honest: the memory, the most important dish, is that amazing mole, comparing what they made recently to what they've been cultivating forever.

Course by course
The menu

Botanas

Aguachile

Elote, mayonesa de chicatana

I definitely enjoyed the dos elotitos. Just such an easy feast, but really well prepared.
Láminas de chayote, pico de callo

The chayote tortilla was really good.
Pulpo

Pulpo, chintextle, escabeche de zanahoria
The pulpo with the escabeche was just really good.
Soft-shell crab taco

The crab is just something fascinating. I really love when Mexican restaurants go for seafood and do it right.
Papadzul abierto de quelites

Papadzul abierto de quelites, huevo de codorniz, chiltomate
Mole madre, mole nuevo
The mole madre with the tortilla and that particular leaf they fly in was really good.
One of my favorite Bourdain episodes is the one where he made mole with a friend, another cook in Mexico, at his family's house. And to be honest, that's the best mole: the one you get at a friend's house, where a tía cooks love for you. Second best is the tasting at Pujol, and that's probably how they got their Michelin stars.
Postres

- Churro
- Nicoatole de matcha
The dessert menu was amazing: the churros, a kind of jello, and some ice cream that was really good.
FYI, I went before Michelin was a thing in Mexico. I've been a few times and always enjoy coming back to this delicious palace of Polanco. I still remember the textures and the presentation. I didn't take enough pictures of all the mezcales, but they were also a blessing and something beautiful they have.
