## Review

I've been to three salas. I miss the original. The original Calle Ponzano (2013) closed in 2024; SDD1 moved to Alonso Cano. They really appreciate Spanish produce, they have great wines, service is always very friendly. That gigantic tomato, the Rolex and the chuleta, just beautiful presented, assembled and it tastes amazing.

My friend zordor once told me about this place and ever since I religiously visited every time that I am in Madrid. This is not the typical place that you should be said if you wanna have a local experience in Spain, but I do believe that this is the kind of place that you should visit especially if you're a tourist and you wanna see a little bit of experimentation with great produce, amazing food, and good quality of customer service.

I once went to the original Sala that has been extended now to many new branches. I have been going to some of the newer ones and they basically have more room, but keep the same atmosphere. You will be sitting at a bar most of the time even if you come with a group and there will be someone helping you with drinks, great selection of wines by the glass and also bottles, and then you start asking for some of the plates. It's recommended to have a couple of plates per person or even more.

If you really wanna do some snacks from the menu I would always get the meat. It's raw and they call it chuletón and they make it into the wrap and it's just beautiful and the presentation and everything is amazing. And then never miss the Rolex. It has fuet and it's wrapped in bacon and also some truffles and an egg and it's basically a major explosion of flavors in your mouth. They do other amazing stuff like the artichoke, which is one of my favorite ones in Spain for the texture and how they fry it. Overall their food selection and everything that they would give you is amazing. It's part show to see part of the presentation of how they finish the dishes and it's always a great place. Great to bring your friends who are being introduced to Spanish cuisine or who already have an idea of how it works and wanna get something more experimental and upscale.

## What to order

- **Tomata:** Half-kilo tomato with brine, olive oil, and basil.
- **Rolex:** Fuet wrapped in bacon, truffle and egg. Finished at the counter.
- **Ribs:** Grilled ribs on the Sala paper.
- **Pulpo a la plancha:** Grilled octopus on the metal plate.
- **Alcachofa:** Fried artichoke petals; great texture.
- **Chuletón:** Raw beef wrap with tomato and tartufata.
- **Berenjena frita:** Fried aubergine with the fish and pink onions.

## Tips

Choose your sala when booking through the official website. The main map points to the current SDD1 address in Chamberí; all three current restaurants are listed below.

## Locations

- **SDD1 — Chamberí** (Chamberí, Madrid): Calle de Alonso Cano, 28, Madrid, Spain. Map: https://www.google.com/maps/search/?api=1&query=Sala+de+Despiece+SDD1+Calle+de+Alonso+Cano+28+Madrid. Current SDD1 in Chamberí. The original Calle Ponzano (2013) closed in 2024; SDD1 moved here to Alonso Cano. Reserve SDD1 on the official website.
- **SDD2 — Centro** (Centro, Madrid): Calle de la Virgen de los Peligros, 8, Madrid, Spain. Map: https://www.google.com/maps/search/?api=1&query=Sala+de+Despiece+SDD2+Calle+de+la+Virgen+de+los+Peligros+8+Madrid. The Centro restaurant, near Puerta del Sol. Choose SDD2 when reserving on the official website.
- **SDD0 — Salamanca** (Salamanca, Madrid): Calle de Ayala, 27, Madrid, Spain. Map: https://www.google.com/maps/search/?api=1&query=Sala+de+Despiece+SDD0+Calle+de+Ayala+27+Madrid. Also called Sala Zero. Choose SDD0 when reserving on the official website. Subcero, the group's cocktail and music space, is downstairs on level -1 at this same address, not a separate restaurant branch.

## If you're visiting Sala de Despiece

### What should I order at Sala de Despiece?

Three things: the Rolex, the raw chuletón wrap and the giant tomato. Add the fried artichoke, and figure on two or more plates each.

### Which Sala de Despiece should I go to?

Any of the three: SDD1 in Chamberí (Calle de Alonso Cano, 28), SDD2 in Centro near Puerta del Sol (Calle de la Virgen de los Peligros, 8), or SDD0 in Salamanca (Calle de Ayala, 27). The newer ones have more room and the same feel. My favorite was the 2013 Ponzano original, which closed in 2024.

### How do you book Sala de Despiece?

Book through the official website, saladedespiece.com, and choose your sala (SDD1, SDD2, or SDD0) when you reserve.

### Is Sala de Despiece a traditional Spanish restaurant?

No. Think great Spanish produce with an experimental, more upscale twist, eaten mostly at the bar while they finish plates in front of you. Good for friends new to Spanish food or ready for something different.
